  • 250g softened butter
  • Four big eggs, 250g caster sugar
  • 1 tsp almond extract (if you’re allergic to nuts, substitute vanilla extract)
  • Self-raising flour 200 grams
  • 50 grams of powdered almond (alternative, use 50 grams of ordinary flour if you have a nut allergy).

Step 1: 

Preheating the oven to 180°C/160°F fan/gas 4. A 20 cm square cake pan should be greased and base lined with parchment paper. In a bowl, combine the butter and sugar. Beat until frothy.
